Potato scones

A traditional Scottish dish; I love them slathered with plenty of butter and honey, but you could eat them with bacon and egg for breakfast too.

  • 500 g mashed potatoes
  • 10 g butter
  • 50 g flour
  • salt

Melt the butter and mix with the potatoes and salt. Add enough flour to make the mixture into a rollable dough. Roll out thinly and cut into triangles. Put on a hot griddle, prick well with a fork, and cook for 3 minutes on each side. Serve warm with plenty of butter and honey or jam (or with bacon for breakfast).
