Marquise du Midi

This is a wonderfully refreshing summer punch, to be drunk chilled outdoors on a hot day, as an aperitif. Prepare it in a very large earthenware bowl and ladle into wine glasses. Warning, it doesn’t taste at all alcoholic!


2 bottles dry white wine
1 bottle Blanquette de Limoux (or other sparkling wine)
750 g lemons
300 g caster sugar

Slice the lemons and pour the white wine and sugar into a large bowl. Stir to dissolve, add the lemon slices and leave to macerate for 24 hours in the fridge. Chill the bottle of blanquette too.

Just before serving, pour in the blanquette. You might want to add ice cubes, but if it’s well chilled it’s not necessary.
