Dried fruit salad

This is a great dessert to follow a substantial one-pot meal (such as couscous, for example). In addition it’s healthy, low-fat, easy to do, and is prepared entirely in advance. What’s not to like?


500 g mixed dried fruits (apricots, prunes, apples, pears, sultanas …)
200 ml tea
200 ml water
4 tbs clear honey
1 tbs lemon juice
1 cinnamon stick
2 tbs brandy (optional)
flaked almonds (optional)
Greek yoghurt to serve

Put the fruit in a large bowl and pour over the tea. Add water, honey, lemon juice and cinnamon stick and leave to soak overnight. If the fruit isn’t soft enough at this point, you might have to zap it in the microwave for 5 minutes, but I’ve never found this necessary. The juice should be quite syrupy.

Before serving, add the brandy and remove the cinnamon stick. Sprinkle with flaked almonds if you like, and serve with Greek yoghurt.
